 Chicken Chow Mein with the Best Chow Mein Sauce (Quick Takeout-Style)

Ingredients:

For the Chow Mein:

2 chicken breasts, thinly sliced

8 oz chow mein noodles (or thin spaghetti)

2 cups shredded cabbage

1 cup julienned carrots

3 green onions, sliced

2 tbsp oil (for cooking)

For the Sauce:

1/4 cup low-sodium soy sauce

1 tbsp oyster sauce

1 tbsp hoisin sauce

1 tsp sesame oil

1 tsp sugar

2 cloves garlic, minced

1 tsp cornstarch + 1 tbsp water (slurry)

Instructions:

Cook noodles according to package; drain and set aside.

Mix all sauce ingredients in a bowl; set aside.

Heat oil in a skillet or wok. Cook chicken until browned and cooked through; remove and set aside.

In the same pan, sauté cabbage, carrots, and green onions for 2–3 minutes.

Add cooked noodles and chicken back to the pan.

Pour in sauce and toss everything together over medium heat until coated and heated through (1–2 minutes).

Tip: Add snap peas or bell peppers for extra crunch!

 Creamy Chicken Broccoli Pasta


Ingredients:


 2 boneless, skinless chicken breasts

 2 cups penne pasta (or pasta of your choice)

 2 cups broccoli florets

 2 tablespoons olive oil or butter

 3 cloves garlic, minced

 1 cup heavy cream

 ½ cup grated Parmesan cheese

 Salt and black pepper to taste

 Pinch of chili flakes (optional)

 Fresh parsley or chives, chopped (for garnish)


Instructions:


1. Cook Pasta and Broccoli: Bring a large pot of salted water to a boil. Add penne pasta and cook according to package directions. During the last 3 minutes of cooking, add broccoli florets to the boiling water. Drain the pasta and broccoli and set aside.


2. Cook Chicken: Season chicken breasts with salt and pepper. Heat olive oil or butter in a large skillet over medium heat. Cook chicken for 5-6 minutes per side, or until golden brown and cooked through. Remove from skillet, let rest, then slice.


3. Make the Sauce: Add a little more olive oil or butter to the skillet if needed. Sauté minced garlic for 1 minute, until fragrant. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and the sauce is smooth. Season with salt, pepper, and chili flakes (if using).


4. Combine: Add the cooked pasta and broccoli to the sauce, tossing gently to coat. Add sliced chicken to the pasta mixture; either place on top or stir in.


5. Serve: Garnish with chopped fresh parsley or chives and serve warm.
